Ama Ebi, or Sweet shrimps are delicacies known for their sweetness. These exotic shrimps are special as it is naturally sweet, and should be enjoyed raw. Cooking the Ama Ebi will strip them of its delicious flavours.
The Ama Ebi are caught when they are young so that they will be at the apex of their tastiness. They are usually served in twos because of their small size.

How to enjoy this
Best eaten raw (sushi, sashimi, or chirashi). Shells and heads can be deep-fried.
1. Remove from the freezer and leave in the chiller for at least 8 hours.
2. Rinse under running water. Remove prawn head, roe and prawn shell.
3. Set aside for 15 – 20 minutes in *salt ice-water bath*
4. Eat with Sushi Rice, or by itself, accompanied with a touch of Wasabi and Soy Sauce
*You can deep fry the prawn head or add them into Miso Soup for extra flavour.
