Botan Ebi is known for its sweet flavors. It is approximately 3 times larger than the more common Ama Ebi. Botan-Ebi season is November to March.
Because of its larger size, the Botan Ebi is easier to peel and extremely sweet. Furthermore, the large Botan Ebi’s head is perfect for decorative garnishes.

How to enjoy this
Best eaten raw (sushi, sashimi, or chirashi). Shells and heads can be deep-fried.
1. Remove from the freezer and leave in the chiller for at least 8 hours.
2. Rinse under running water. Remove prawn head, roe, and prawn shell.
3. Set aside for 15 – 20 minutes in *salt ice-water bath*
4. Eat with Sushi Rice, or by itself, accompanied with a touch of Wasabi and Soy Sauce
*You can deep fry the prawn head or add them into Miso Soup for extra flavour.
